Garlicy Roasted Mushrooms

One of the few things from Costco that I don't need help going through is their 1.5 lb box of cremini mushrooms. Roasting the mushrooms seems to concentrate the flavors and make them extra satisfying. I like this recipe because its easy and uses ingredients I usually have in the house. A pound and a half of mushrooms sounds like a lot, but they seem to disappear quickly! There are so many ways to use these garlicy roasted mushrooms (e.g., as a side dish, with mashed potatoes, chopped up in wraps or a pasta dish, tossed in omelets, plain, etc.)

Ingredients

1.5 lbs cremini (baby bella) mushrooms, washed and stems cut off

2 tbsp olive oil

3 garlic cloves, minced

1 tbsp Italian seasoning

1/4 tsp sea salt

1/8 tsp ground black pepper

lemon (optional)

Directions

1.  Preheat oven to 450 F.

2.  Mix all the ingredients together in a large baking tray (make sure the sides are at least 1 inch tall so that the liquid doesn't spill over while it is in the oven).  The baking tray should also be big enough that the mushrooms are in a single layer.  Make sure all the mushrooms are coated with the oil and spices.

3.  Roast in oven for 45 minutes, stirring every 15 minutes.  You will notice a LOT of liquid come out- this is normal since mushrooms are very watery.

4.  Use a slotted spoon to transfer the mushrooms to a serving dish, leaving the liquid behind.   Optional: squeeze a a few drops of lemon on top prior to serving.  Serve warm.

Suggestion: Instead of discarding the mushroom liquid, use it in soups, rice, or pasta to add flavor.
