Ranch Dressing (with Vegan Option)
I make this Ranch dressing to drizzle on top of my Buffalo Cauliflower. The mild, creamy dressing goes really well with the acidic spiciness of the buffalo sauce. It also tastes great as a salad dressing or drizzled on top of roasted veggies. The recipe below has the herbs and proportions that I use year-round since I don’t always have fresh herbs. However, I definitely recommend making this with fresh herbs if you have access to them. If using fresh herbs, triple the amount of each one.
Ingredients
1/2 cup buttermilk (if vegan, substitute with soy milk)
1/2 cup plain yogurt (if vegan, substitute with vegan mayonnaise)
1 tbsp lemon juice
1/2 tsp dried dill weed
1/2 tsp dried chives
1/3 tsp dried parsley
1/3 tsp onion powder
1/3 tsp garlic powder
1/4 tsp kosher salt
1/8 tsp ground black pepper
Directions
1. Whisk everything together in a small bowl. Transfer to a glass jar and refrigerate until ready to use.
If you are ever lucky enough to get carrots with their green tops still attached, don’t throw them away! This tangy, spicy, herby sauce is an amazing way to use the greens, and it complements the sweetness from the carrots so well. Finding ways to use all of the produce and minimize food waste always makes me extra happy.
